When my father, at age 58, died suddenly I was devastated, but I was as equally devatasted when I learned that the reason for his untimely death was food!
My father’s normal middle age physique was clever at disguising the fact that what he ate was quietly creating a wall of plaque which in turn was opening a door. A door that allowed a coronary occlusion to creep in silently, like a thief, and steal my father’s life away - right before my eyes, one warm and sunny, Sunday afternoon.
Up and until that day I saw food as innocuous. Never in a million years did I ever suspect it could rip someone’s life away, least of all my own beloved father’s.
His death taught me a valuable lesson. Food is important, vital to our existence, but it needs to be better understood so that we know what we are doing to ourselves.
My dad had no idea that what he was eating would end up shortening his life and most of us don’t either, but I also don’t think that we need to live by such a stringent set of rules over food that meals become so miserable we mourn the thought of them.
I think its possible to be able enjoy a meal to the fullest, as part of the celebration of life as God intended, without it killing us.
Vitality Cuisine™ seeks to find that “Middle of the Road,” and by that I mean using a light-hearted approach to making food that makes you feel good that is also good for you and fun and enjoyable to eat in moderation, too.
